All-Day Menu for Mom 💐

🌞 Mother’s Day Breakfast

🥞 Strawberry Shortcake Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 egg
  • 2 tbsp melted butter
  • 1 cup sliced strawberries
  • 1 tbsp sugar (for berries)
  • Whipped cream

 

Instructions:

  1. Mix strawberries with sugar, set aside.
  2. In a bowl, whisk flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, egg, and melted butter.
  4. Combine wet and dry ingredients until just mixed.
  5. Cook pancakes on a greased skillet over medium heat.
  6. Stack pancakes, layer with strawberries and whipped cream.

🍫 White Rose Hot Chocolate

Ingredients:
• 2 cups milk
• 1/2 cup white chocolate chips
• 1/2 tsp rose water
• Whipped cream (optional)
• Dried rose petals or pink sprinkles (optional)

Instructions:
1. Heat milk in a saucepan until warm (don’t boil).
2. Stir in white chocolate chips until melted.
3. Add rose water and stir.
4. Pour into mugs and top with whipped cream and rose petals.

🥗 Mother’s Day Lunch

🥧 Spinach & Goat Cheese Quiche

Ingredients:
• 1 store-bought pie crust
• 1 tbsp olive oil
• 1/2 onion, chopped
• 2 cups fresh spinach
• 4 eggs
• 1 cup milk or half & half
• 1/2 tsp salt
• 1/4 tsp pepper
• 1/2 cup crumbled goat cheese

Instructions:
1. Preheat oven to 375°F (190°C).
2. Sauté onion in olive oil until soft. Add spinach and cook until wilted.
3. In a bowl, whisk eggs, milk, salt, and pepper.
4. Add spinach mixture and goat cheese.
5. Pour into pie crust and bake 35–40 mins until set and golden.

🍓 Blushing Berry Fizz

Ingredients:
• 1/4 cup raspberries and blueberries
• 1/2 cup lemonade
• Sparkling water
• Ice, mint (optional), lemon slice (optional)


Instructions:
1. Muddle berries in a glass.
2. Add lemonade and ice.
3. Top with sparkling water.
4. Garnish with mint or lemon.

🍝 Mother’s Day Dinner

🍗 Creamy Tuscan Chicken

Ingredients:
• 2 chicken breasts, halved
• Salt & pepper
• 1 tbsp olive oil
• 2 garlic cloves, minced
• 1/2 cup sun-dried tomatoes, chopped
• 1 cup heavy cream
• 1/4 cup grated Parmesan
• 1 cup spinach


Instructions:
1. Season chicken with salt and pepper. Sear in olive oil until golden, remove.
2. In the same pan, sauté garlic and sun-dried tomatoes.
3. Add cream and Parmesan, simmer 2–3 mins.
4. Stir in spinach until wilted.
5. Return chicken and simmer until fully cooked (~5 mins).

🍷 Pink Sunset Sangria

Ingredients:
• 1 bottle rosé
• 1/4 cup brandy
• 1/4 cup strawberry liqueur (or orange juice for lighter version)
• Sliced strawberries, oranges, raspberries
• Mint (optional)


Instructions:
1. Combine rosé, brandy, and liqueur in a pitcher.
2. Add sliced fruit. Chill for at least 1 hour.
3. Serve over ice with mint garnish.
