EASTER RECIPES: Garlic & Rosemary Roast Lamb

Sometimes you just want to go all in for Easter dinner—and this roast lamb is exactly that. Juicy, flavorful, and fancy enough to feel festive without being fussy.

What you’ll need:

  • 1 leg of lamb (4–5 lbs)
  • 4 garlic cloves, sliced
  • 2 tbsp chopped rosemary
  • 2 tbsp olive oil
  • Salt, pepper
  • Optional: a little lemon zest to brighten things up

How to make it magic:

  1. Preheat your oven to 400°F.
  2. Cut little slits in the lamb and stuff in the garlic slices.
  3. Rub the whole thing with oil, rosemary, salt, pepper, and zest if you’ve got it.
  4. Roast for 1.5–2 hours (until internal temp hits 135–145°F).
  5. Let it rest for 15 minutes so it stays juicy when you slice.
